What is Rollatini?
It is an Italian-style dish and is also known as an involtini that is usually made with thin slices of eggplant, which are dusted with flour or lightly breaded and covered with the different types of cheeses and seasonings, then rolled up and baked. It is a type of recipe that can be used at the firehouse or for parties. You can freeze the leftovers or refrigerate and eat them over the next several days that’s an added advantage of it!
How to Make it?
Dip the eggplant slices in egg, then coat with breadcrumbs then fry it until golden brown. Now spread a thin layer of ricotta cheese onto each slice of eggplant and place prosciutto slice onto each one. Now roll it tightly, place it into the baking dish and pour spaghetti sauce over it and top with mozzarella cheese.Bake it until the cheese is melted and lightly browned. Serve it with your favorite dip.
