Mix Vegetable Indo-Thai Curry

Ingredients
- 2 tsp Olive Oil
- 1 tsp Garlic chopped
- 1 tsp Ginger chopped
- 1/2 tsp Asafoetida / Hing
- 1 Onion chopped
- 1/4 cup Carrot chopped
- 1/2 cup Mushrooms
- 1/2 cup Spinach
- 1/2 cup Broccoli florets
- 1/2 cup Sweet corn
- 1 cup Coconut milk
- Salt to taste
- 1/2 tsp Red Chilli Powder
- 1/2 tsp Turmeric Powder
Instructions
- In a pan, add oil and chopped ginger, garlic and asafoetida.
- Now add onion and lemon leaves.
- Now add finely chopped carrot.
- Add mushroom and cook for a minute.
- Add spinach, broccoli, and sweet corn.
- Add coconut milk and water.
- Add turmeric powder, red chili powder, salt and cook it for 2 minutes.
- Garnish it with chopped raw onion, coriander leaves and serve it with boiled rice.
