Mix Vegetable Indo-Thai Curry

Ingredients

  • 2 tsp Olive Oil
  • 1 tsp Garlic chopped
  • 1 tsp Ginger chopped
  • 1/2 tsp Asafoetida / Hing
  • 1 Onion chopped
  • 1/4 cup Carrot chopped
  • 1/2 cup Mushrooms
  • 1/2 cup Spinach
  • 1/2 cup Broccoli florets
  • 1/2 cup Sweet corn
  • 1 cup Coconut milk
  • Salt to taste
  • 1/2 tsp Red Chilli Powder
  • 1/2 tsp Turmeric Powder

Instructions

  • In a pan, add oil and chopped ginger, garlic and asafoetida.
  • Now add onion and lemon leaves.
  • Now add finely chopped carrot.
  • Add mushroom and cook for a minute.
  • Add spinach, broccoli, and sweet corn.
  • Add coconut milk and water.
  • Add turmeric powder, red chili powder, salt and cook it for 2 minutes.
  • Garnish it with chopped raw onion, coriander leaves and serve it with boiled rice.
