Super Simple Lemon Muesli Cake

  • 150 gms Amul Butter
  • 150 gms Castor Sugar
  • 3 pcs Egg
  • 150 gms Self-Raising flour
  • 3 tsp Lemon rind
  • 3 tsp Lemon juice
  • 100 gms Muesli
  • 3 tbsp Milk
  • 50 gms Icing sugar


  • Mix the icing sugar with enough lemon juice to make a smooth icing and spread over the cake.
  • Cream the butter and sugar until light and fluffy. Beat the egg a little at a time, Fold in flour.
  • Add the lemon rind, juice and muesli and mix well. Put mixture into a 2lb loaf tin, lined with parchment.
  • Bake in a moderate oven 180°C, gas mark 4 for about 35 minutes, allow to cool. Your cake is ready to serve!
