Super Simple Lemon Muesli Cake

Ingredients
- 150 gms Amul Butter
- 150 gms Castor Sugar
- 3 pcs Egg
- 150 gms Self-Raising flour
- 3 tsp Lemon rind
- 3 tsp Lemon juice
- 100 gms Muesli
- 3 tbsp Milk
- 50 gms Icing sugar
Instructions
- Mix the icing sugar with enough lemon juice to make a smooth icing and spread over the cake.
- Cream the butter and sugar until light and fluffy. Beat the egg a little at a time, Fold in flour.
- Add the lemon rind, juice and muesli and mix well. Put mixture into a 2lb loaf tin, lined with parchment.
- Bake in a moderate oven 180°C, gas mark 4 for about 35 minutes, allow to cool. Your cake is ready to serve!
