Grate carrots and place in a microwave bowl. Add a glass of water with a pinch of salt, microwave it for 3 min.
Remove from microwave and drain carrots in a strainer.
In a nonstick pan, add butter, carrots, salt, pepper, honey, and cook for a minute. Sprinkle sugar and toss for 1 more minute, transfer the carrots to serving place.
In the same nonstick pan, add cashews and almonds and toss. Sugar and honey left in the pan will caramelize the nuts. add caramelized nuts on carrots, garnish it with chopped coriander leaves.
