Corn Carrot Muffins

Ingredients
Hadvo batter
- 200 gms Butter Milk
- 500 gms Bottle Gourd grated
- 1 cup Carrot grated
- 1 cup Fenugreek chopped
- 1/2 cup Coriander Leaves chopped
- 3 tbsp Green Garlic
- 3 tbsp Ginger chilly paste
- 2 tbsp Sesame Seeds
- 1 tsp Ajwain
- 1/2 cup Corn seeds
- 1 tsp Lemon juice
- 1/2 cup Jaggery
- 1 tbsp Food oil
- 1 tsp Baking Soda
- 2 tsp Salt
Tempering
- 1 tbsp Sesame Seeds
- 1/2 tsp Mustard Seeds
- 2 tbsp Food oil
- 5 pcs Curry Leaves
- Coconut grated
Instructions
- Take hadvo batter and add Grated bottle gourd, carrot, ginger-chilly paste, green garlic paste, chopped fenugreek seeds, jaggery, ajwain, sesame seeds, lemon juice, salt, oil and baking soda. Mix all ingredients and prepare a batter.
- Take this mixture in muffins mould and bake it for 15 min at 180'c.
- Temper with mustard seeds and oil.
- Garnish with grated coconut.
