In a pan, add oil and chopped ginger, garlic and asafoetida.
Now add onion and lemon leaves.
Now add finely chopped carrot.
Add mushroom and cook for a minute.
Add spinach, broccoli, and sweet corn.
Add coconut milk and water.
Add turmeric powder, red chili powder, salt and cook it for 2 minutes.
Garnish it with chopped raw onion, coriander leaves and serve it with boiled rice.
