Chicken Tortilla Soup Ingredients

2 Jalapeno diced
6 cups Chicken stock
400 gms Tomatoes fire-roasted diced
400 Black bean rinsed, drained
3 boneless chicken breasts
2 tsp Lemon Juice

1 cup Coriander Leaves
1 cup Monterrey Cheese

Chicken Tortilla Soup Step by step

In a large saucepan heat the vegetable oil. Add the onions and cook for 2 minutes.

Once the onions have softened add the garlic and jalapenos, cook for another minute.

Pour the chicken stock, tomatoes, and beans into the pot and bring to a boil.

Once at a boil lower heat to simmer, add your chicken breasts, salt, and pepper. Cook the chicken for few minutes.

Once the chicken is cooked remove from pot. cool it and add lemon juice, fresh coriander leaves to the soup.

In a serving bowl add chicken soup and top with a lemon, grilled tortilla strips, and shredded cheese.
