Yes, Winter is here and the celebration season starts. I like to spend Christmas holidays with my family. When I’m talking and thinking about my family it always ends with desserts in my mind. My grandmother like to bake and the way she makes pies, cookies and cakes are just amazing. During family gathering for Christmas dinner, she never misses serving moist red velvet cupcake with cream cheese frosting, which is one of my favorite from her kitchen.

We live in a countryside area where most of the people are aged and they grow fruits and vegetables in there backyard, my family likes to grow lettuce, tomatoes, squash and some basic herbs, with this self grown vegetables my mom bake squash pie (which is top pie in my list), squash soup, grilled Barbacoa and many more dishes.

Oops..! I think I lost my main focus, lets back to it. I’m talking about my favorite grandma recipe moist red velvet cupcake. My mom tells me that during the 1960s grandma use beetroot in the cupcakes to get the red color and now she is using food color for quick baking. I think this idea of using beetroot in muffins is healthier and it may contain fewer calories too.

Ingredients

  • 2 cup All Purpose Flour
  • 1 cup Sugar
  • 1 tbsp Baking Powder
  • 1/2 tbsp Baking Soda
  • 7 pcs Strawberry
  • 1/3 cup Food oil
  • 1 tbsp Milk
  • 1 tbsp Vanilla Essence
  • 1 tbsp Vinegar
  • 1 tbsp Food coloring red color
  • 1 tbsp Strawberry Pulp

Instructions

  • Preheat the oven to 180 degree. In a mixing bowl take sugar and oil. Mix well till the sugar dissolves completely.
  • Add milk and vanilla essence, fresh strawberry pulp, vinegar and beat well. Add food color and strawberry pieces. Transfer to the molding bowl and bake in preheated oven for 12-15 minutes.
  • Cool it and serve the dish.
